Hey Guys! It is finally starting to feel like fall in North Carolina and I am so excited, Fall is my favorite season. I think it’s no secret I love to bake, I have a major sweet tooth, it wasn’t until a few years ago I started to come up with recipes of my own.
I couldn’t find healthy raw/vegan recipes that came out right, consistency wise, so I started testing recipes. This Guilt Free Vegan Apple Crisp has become one of my go to recipes for the Fall, even Christmas!
It is so simple it just requires three ingredients: Pecans, Apples and Dates.
1. Firstly wash your apples, I usually buy a bag of Organic Gala from Trader Joes, and cut into smaller slices (no peeling of the skin…rejoice). I usually throw the apples into a big pyrex baking dish and toss it with cinnamon, pumpkin spice and one tbsp of coconut sugar.
2. Preheat the oven to 425 and bake those babies for 45 minutes to an hour depending on how soft you like your apples. Make sure to toss half way through and add another tbsp of coconut sugar.
3. For the Crumble Topping: take 1 cup of dates, half a cup of pecans (basically 2:1 ratio) and pulse in a food processor until it crumbles. Put this on top of the apples once they are done, I have also made a crust out of this before in the past it’s very versatile.
